Refosco

A wine with an intense ruby red color, tannic, low alcohol content; nervy when new. Fruity vinous perfume, with a distinct scent of raspberry and wild blackberry; slightly herbaceous.  It refines and improves with the right ageing and takes on a pleasant somewhat bitter flavor.

It is a wine for all dishes, excluding fish.  It is particularly suitable with red meats, roasts, game, and mature cheeses. Should be served at room temperature.

Sauvignon

Color has straw yellow shades with greenish reflexes. A delicate aromatic perfume which recalls yellow pepper, melon, and banana. Dry, but at the same time elegant, cherishing and velvety.

Wine goes well with appetizers, creams, and soups, but can also be enjoyed between meals. Good with seafood: scampi, lobster, and crabs. To be served at 46°-50° F.

Schioppettino

A full-bodied wine, not very alcoholic, with a good fixed acidity, fresh and citrusy. Red color with violet shades; a perfume that recalls wild blackberry, raspberry, and blueberry. With ageing, it evolves into an elegant bouquet of underwood, musk, and aromatic wood.

Recommended for pasta with hare, wild boar, and deer. To be served at 60°-68° F.
