Chianti Riserva    DOCG
Damiani Chianti Riserva is made from 85% select Sangiovese grapes and 15% Merlot grapes. The grapes are harvested by hand in September and October and then placed in cases to preserve the wholeness of each grape bunch. Grapes are picked when their fragrance, sweetness and their skins’ polyphenol levels are just right.
The vinification process is carried out in wooden barrels and lasts between 7-12 days. This is a very delicate process and therefore, special care is taken in soaking the skins. The wine is then drawn by hand with the help of a soft vertical press. Careful attention is given to the product obtained during this process. The next step is fermentation, which transforms the Chianti into a harmonious and complete wine.  It ages 18 months in wooden barrels, as to create the perfect harmony between the wine and the wood. It then ages another 6 months in the bottle.

Characteristics: The color is ruby-red, lively and brilliant. Aroma is intense, fresh, lively and persistent, reminiscent of the grape still on the vine. The taste is soft and balanced, with an enjoyable aftertaste that recalls all the aromas of fermentation. This Chianti Riserva is a harmonious and full-bodied wine.
This wine is produced only during select years. Up to 2,500 bottles can be produced.

This Chianti goes through a traditional vinification process that lasts 7 to 12 days. Special care is taken in soaking the skins, as it is a very delicate process. The wine is drawn by hand with the help of a soft vertical press. Careful attention is given to the product obtained during this process. The next step is fermentation, which transforms the Chianti into a harmonious and complete wine. The refinement period is quite lengthy as the wine ages for over a year in tanks and is then bottled within 16 months of harvest.
